Sausage Rolls

Makes 24


  • 500g mince beef

  • 1 cup grated veggies (eg. carrot, zucchini, potato, sweet potato) all liquid squeezed out

  • 1 cup grated cheese

  • 2 eggs

  • 1 tablespoon Dijon mustard

  • 3 sheets puff pastry or mountain bread

  • 1 egg for brushing pastry (optional)


  1. Remove puff pastry (if using) from freezer

  2. Pre-heat oven to 180 degrees Celsius

  3. Mix all ingredients together (except pastry and egg)

  4. Cut each square of puff pastry/wrap in half, now creating 2 rectangles per sheet.

  5. Divide mince mixture into 6. Shape 1/6 of mince mixture into a sausage shape and place along the long side of pastry/wrap, roll up to enclose filling

  6. Repeat with remaining mixture and pastry/wraps.

  7. Cut each roll into 4 pieces or more for smaller sausage rolls

  8. Place on a lined baking tray. Brush with egg (optional)

  9. Bake at 180 degrees Celsius for 20-30 minutes until golden brown.
