Ingredients:

2 cups wholemeal self raising flour
-
1.5 cups veggies (Eg. grated carrot, zucchini, potato, sweet potato, frozen spinach cube) all liquid squeezed out
-
1 cup grated cheese
-
2 eggs
-
1/4 cup oil or butter
-
1 cup milk

Method:​

Pre-heat oven to 180 degrees Celsius
-
Mix all ingredients together (except flour)
-
Gently mix through flour until all combined
-
Spoon into muffin trays or cases
-
Bake for 20-30 minutes depending on size until golden brown.
