Ingredients:

  • 2 cups wholemeal self raising flour

  • 1.5 cups veggies (Eg. grated carrot, zucchini, potato, sweet potato, frozen spinach cube) all liquid squeezed out

  • 1 cup grated cheese

  • 2 eggs

  • 1/4 cup oil or butter

  • 1 cup milk

Method:​

  1. Pre-heat oven to 180 degrees Celsius

  2. Mix all ingredients together (except flour)

  3. Gently mix through flour until all combined

  4. Spoon into muffin trays or cases

  5. Bake for 20-30 minutes depending on size until golden brown.
