Helping busy parents pack simple, nutritionally balanced lunchboxes...fast!
Ingredients:

1 onion, diced

2 cloves of garlic (or 2 teaspoons of garlic oil)

500g beef mince
-
500g pork/veal mince

2 cups of grated/blitzed vegetables (eg. carrot, zucchini, celery, broccoli, mushrooms)

2 tins diced tomatoes
-
1 tin lentils, drained (optional)

1 frozen spinach cube
-
1 tablespoon dried oregano
-
1 tablespoon dried basil
-
1 tablespoon tomato paste

1 cup water
-
1 stock cube or salt and pepper to taste
Method:

In a large frying pan or saucepan, fry diced onion and garlic in a small amount of oil until soft.

Add both types of mince and fry until brown.

Blitz in a food processor, grate or finely chop all vegetables.

Add vegetables and all remaining ingredients to the pan. Bring to the boil, cover and simmer for a minimum of 15 minutes or longer if you have it.

Remove lid and simmer for another 15 minutes before serving.

This is a double batch recipe. Save half for another meal.

Serving options: with pasta, with zucchini or vegetables noodles, in baked potatoes, with rice, with tortilla strips.
